This past Thursday was a red letter day in Flavor Catering history: the official (soft) launch of our very own food truck. We parked our happy camper in front of the Tennessee Brew Works Taproom and got to work.
The inaugural menu was as a nod to our Tennessee heritage, but with a twist: Hot Chicken …Tacos. We took some homemade flour tortillas from local favorite La Hacienda, added our signature hot chicken, and topped it with house made hot sauce, jalapeño slaw, house pickles, cotija cheese and pickled jalapeños. For our non-meat eating friends, we had a similar taco of hot fried catfish or hot spiced tofu. There was also the “Peasant’s Plate,” consisting of Mexican rice, white beans with chorizo, and Hot Water Cornbread. Banana pudding was for dessert, and to wash it down? Mexican Coke, Sundrop, and Sweet Tea (naturally). Oh, and of course some delicious brews from TN Brew Works!
We had a great time breaking in the food truck and look forward moving into full gear over the next couple of weeks. Look for us at the upcoming Americana Music Festival in Franklin, TN.
